Aged strip loin roast ~ seasoned, seared and dry roasted
Roasted to 125* internal ~ rested and sliced
Sided up with mashed Yukon Golds & turnips, pan onion gravy & roasted fresh brussel sprouts. Winner, winner roast beef dinner!!

Hope everyone had a great Thanksgiving! I smoked a turkey on my drum and
