Y'all Want Some Taters?

Twice baked Kaw-Cajun tater wedges, to side up a big bleu cheese booga ~ skin was rubbed with bacon grease prior to baking, so it was nice and crispy

Dressed wit a lil' shredded Tillamook cheddar & sour cream thinned w/buttermilk ranch

Nice and cool in the back yard @ 8 AM this morning ... lil' dew on the grass ... lil' smoke in the air ... yeh, life is good in the heartland. Ronbeaux's Bleu Boogas charred medrare ~ lunch is served. You want fries wit dat, huhhh???

Twice Baked Kaw-Cajun Tater Wedges

Bigassed Idaho tater, scrubbed and rubbed wit bacon grease & dusted real good wit my top secret Kaw-Cajun tater seasoning.

Baked 3/4 way, hot and nasty 425* ~ then immediately out the oven cut into wedges while they still piping hot (there's a reason for dat, but don't ask me because dat's a secret too ... and iffin' you do know why, don't be tellin' nobody else they all be doing it.)

After par-bakin'em & wedgin'em ... drag'em thru the bacon fat again and give them another shot of dat tater seasoning. Now they ready for the 2nd bakin' to git all nice & golden brown and crispy, yeh. Thinkin' these might be good wit dem big bleu ronbeaux boogas.

Got a buddy down NOLA way, Ronbeaux, who been braggin' on his blue cheese burgers ... he mixes the crumbled blue cheese right into the meat (ala juicy lucy) ... so this morning I hauled off and whooped up a batch of'em, just to see what all the fuss was about. Whooooboy, these gonna be good, ah garrontee.

Tillamook cheese grits ~ 16/20 ct. shrimps, Burgers Smokehouse country ham & bacon, da holy trinity, my own cajun spice blend and a splash dat good Cajun Power garlic sauce

I had some turnip greens wit mah shrimp & grits last night ~ is it considered bad manners to pick up da bowl & drink dat turnip green likker, or should i have throwed a piece of cornbread in there & sopped it up? I ain't sayin' what I did, but I swear I felt my mama reach down from Heaven & come up the side my head wit a flyswatter.

Homemade Refried Bean Dip

OK, so I made some refried beans from scratch last week - kicked up with bacon & onions/chiles and spices ~ good stuff. Then I took some them homemade refried beans & added some my homemade roasted tomato & green chile salsa to it, and also added some chopped black olives ... topped it with a bunch of shredded Tillamook cheddar & heated it to melt the cheese ... whooooboy, made a dandy bean dip.

Mini Peach Turnovers

Mais ... I hadda some leftover scratch pie dough from a quiche I made a couple days ago, so I hauled off and made these lil' peach turnovers wit dat dough and some homemade peach preserves ~ baked'em up nice & golden brown then dusted'em wit a lil' powdered sugar. I threw three these in a bowl & warmed'em up and topped with a scoop vanilla ice cream for dessert last night. Gonna use the other three to make a *peach pie blizzard* for a lil' afternoon treat today.

And Now ... The Rest Of The Story

Homegrown cantalope and tomatoes, scratch biscuits w/bacon gravy, hot link sausage, farm fresh egg/cheese omelette topped with sautee'd peppers and onions. A proper plowboy's breakfast, tru dat.

Y'all surely din't think dat lil' biscuit and jelly was all I had for breakfast, didja? HUHHHH???? Appropo to the homegrown tomatoes & gravy ... when I was a kid, my ol' Daddy, him, would always put a lil' gravy on his sliced 'maters when both were available. I didn't get it then ~ it sounded awful to a kid ~ but now, I totally get it! At least once every summer, when tomatoes are in season, I drag my sliced 'maters thru some gravy. Pops, you were right all along ... and I ain't just talking about 'maters & gravy, either.

Big Ol' Honkin' Manwich

I scored some more homegrown tomatoes this morning, and you know what that means ... it's big ol' honkin' manwich time, baybee!! Jewish rye, country dijon, romaine lettuce, genoa salami, honey ham, pepperoni, tillamook cheddar, thick sliced homegrown tomatoes, creamy cole slaw & red onions ... badda boom ... lunch is served.

Shredded/Smoked Beef & Bean Burritos

Smoked shredded beef & homemade refried bean burritos, smothered with homemade chipotle chili con carne & dressed to the max ~ sided up with homemade roasted tomato & green chile salsa and sour cream. I called it a *Suicide* ... but if you leave off the sliced jalapenos, it's just an attempted suicide.

Pulled Beef BBQ

Chuck roll, cut into bigassed roasts & rubbed down with Oakridge BBQ Beef Rub ... 7 hours in the hickory smoke, 1 hour in foil, pulled & tossed with a lil' my homemade bbq sauce.

Rainbow Stew

Got Merle Haggard on the brain, after watching that doc on PBS last night ... so in honor of ol' Hag I whooped up some Rainbow Stew today ... sirloin steak, taters, onions, fresh garlic, asparagus, white hominy, roasted tomatoes & chiles ~ cleaned out all the orphans in my fridge & ended up with a skillet full of plowboy vittles ... chased it down wit some of dat free bubble-up. Hag rules!

The olive salad gives it a cajun spin, the slaw & homegrown 'maters make it sloppy. Sloppy as it were, it was damn good eats over the kitchen sink
