Shredded beef bbq ~ used choice grade chuck roll cut into *roasts*, studded with Burgers' bacon lardons & rubbed with Oakridge BBQ rub ... smoked hot & nasty (300-325*) using hickory wood, then crutched @ 165* and taken up to 200* ... shredded like buttah.
Here's some of it that I sliced & chopped when I pulled it out the smoker @ 165* to foil it ... it wasn't done, but close enough fer gubmint work ... I was hongry!
Fire In The Hole!! Stoked up the smoker about an hour ago ~ just put the meat on: bigassed beef chuck roasts studded with Burgers bacon lardons & rubbed down with Oakridge BBQ rub. Blue hickory smoke risin', baybee!!
Fall begins today, right? That means it's almost Christmas, right? So, just to beat the rush, I did my Christmas shopping this morning ... bought MYSELF about $50 worth of Cajun Power products ... Ho Ho Ho ~ Merry Christmas!!!!!!! http://www.cajunpowersauce.com/index.cfm
Mais, I hauled off and baked a bone-in ham yesterday ~ ham & eggs for Sunday breakfast today, ah garrontee.
These are all the choppin' block yum-yums that resulted from breaking down & slicing that whole baked ham ... scraped'em all up, slapped'em on a slice of bread (while they were still warm), squirt of my homemade bastardized Piedmont bbq sauce, badda boom ... lunch, baybee.
OK OK ~ so I put a bigassed bone-in ham in the oven about an hour ago ~ just basted it ~ will bake & baste for 4 hours slow & easy, then glaze (maple) for a final 20-30 minutes. On the docket: scalloped potato & ham casserole, ham & beans with cornbread, deviled ham salad, sliced ham for sandwiches, ham & beans, etc. On a side note ... I woke up this morning with NO hangover and then I thought of all them poor bastids at Winfield who are feelin' like crap right about now. Whooooboy, I don't miss that part about Winfield ~ sobreity rocks! Now ... pass the ham, please.
Where is now my father's family That was here so long ago Sitting 'round the kitchen fireside Brightened by the ruddy glow Chorus: We shall all be reunited In that land beyond the skies Where there'll be no separation No more parting, no more sighs
Some have gone to lands far distant And with others made their home Some upon the world of waters All their lives have chose to roam
Some have gone from us forever For with us they could not stay They have all dispersed and wandered Gone away, so far away
We shall meet beyond the river In that land of pure delight Where no sickness or no sorrow Will our joys there ever blight
We shall all be reunited In that land beyond the skies Where there'll be no separation No more parting, no more sighs
