OK, once in a while I do something right ... and this was one of those times. This is a choice grade beef tri-tip that I brined-cured for 5 days, then braised with cabbage, potatoes, onions & carrots and topped with a lil' homemade horseradish cream sauce. Best corned beef I ever ate. Reubens today, Oh Boy!
