Blackened Cobia

Blackened cobia sided up with stewed bread'n'tomatoes, cheesy grits, cornbread, green tomato pickles & some kicked up tartar sauce made with homemade corn chow chow.

Brined cobia filet ... brushed with bacon fat, seasoned generously with homemade blacken seasoning & into screamin' hot black iron skillet for 2-3 minutes on each side then finished in oven.

Brined filets before seasoning ~ cobia is some beautiful fish, firm and tasty ... saltwater fish ... this was caught by a buddy of mine (Hawgeye Mike) off the coast of Florida.
