Roast Pork Loin & Dirty Rice

This is the *dirty* part of the dirty rice: ground beef, pulled pork, the holy trinity and some cajun herbs and spices

Rice cooked in beef stock, with the dirty stuff folded in

Pork loin roast ~ seasoned with cajun spices & roasted with onions & beer

  1. I've never made dirty rice as the chicken giblets part never turned me on, but I could sure go for this version.

  2. yeh, when i want to be *authentic* i'll boil some hearts & gizzards then grind them & put them into my dirty rice ... just no liver for me, thank you very much. sometimes in the name of authenticity, i'll do the gizzard/heart thing in my homemade boudin also ... but most of the time i skip the chicken *parts* entirely.
