This & That

Sliced smoked pork loin for makin' Cuban sandwiches

Homemade sweet & sour red cabbage with Burgers bacon

Yellow cornmeal mush (polenta) studded with bacon bits & cracked black ~ molded & chilled ~ to be sliced and pan fried for breakfast, drizzled with some dat good Steen's cane syrup

  1. I'm a big Cuban sandwich fan and there is a little (5 tables) family run place here serving the real thing. We've made them once at home, but I just saw "Authenic Cuban Bread" in Krogers the other day so I'm ready for another made at home version. The little restaurant serves a vinaigrette on tne side that I wish I had the recipe for.

  2. the vinegrette sounds interesting ... is it like a chimichurri? i've only had cubans dressed with plain yellow mustard and dill pickles. i've got some good sliced baked ham (not deli ham) that was also good on the cubans - no real cuban bread is available in topeka, so i used a deli baked hoagie roll - worked fine. authentic is always best, if it's available.
