Smoked Beef/White Cheddar Mini Chimis

Mini chimichangas filled with smoked/pulled beef chuck, aged white cheddar & deep fried

Nice and crispy ~ sided up with a compound green onion cream cheese and homemade salsa

Tasty lil' buggers, yeh

  3. buddy of mine made these & brought them over to me ~ all i did was deep fry them. it's just smoked/shredded chuck roast & aged white cheddar rolled up in a half flour tortilla & secured with a toothpick, then deep fried for a couple minutes.

  4. Those look tasty Chez. I smoked some chuck along with some ribs for Super Bowl. Was thinking of using the leftover beef for a pot of chili this week, but may have to change the plans now.

  5. chili sounds good right about now - colder than hell here. make some big manly man chimis and smother them with chili.(g) we bought a whole chuck roll the other day (22 pounder) and used about half of it to mix with pork & make sausage. also cut a few big chuck roasts from it, and that's what ended up gettin' smoked & in these chimis.
