Homemade dirty rice gnocchi, boiled, shocked, drained & tossed with evoo ~ can fridge them at this point & reheat/sauce them later.
The gnocchi (little pillows) are lil' potato dumplins made with mashed potatoes, flour, egg ... and in this case, some leftover dirty rice & asiago cheese.
Here's the gnocchi dough, prior to rolling out and cutting into individual gnocchi
Sauced with a homemade cajun/white cheddar alfredo sauce, and topped with diced tasso
