Wild rainbow trout, stuffed with jambalaya & napped with homemade tasso hollandaise.

Tender flaky trout ~ caught by my buddy Mike Tucker ... bronzed & stuffed with savory andouille/smoked chicken jambalaya.

This trout was really good ... treats like this don't pass through the ol' coonass cucina very often.

Smoked Chicken Thighs For Jambalaya

These are some nice plump smoked chicken thighs ~ to go in a pot of jambalaya, along wit dat good Krizman's andouille sausage. Problem now, as I see it, is to keep from eating a couple of these thighs before I can git the jambalaya made....KWIM?
