Choice grade/aged KC Strip steak and 4 big-assed boneless pork loin chops ~ steak seasoned with DP Raising The Steaks and chops seasoned with Smokin' Guns Hot
Added a couple small coils homemade hot sausage and a homemade fattie (fattie seasoned with DP Redeye Express) ~ no seasoning on the coils
Coals dropped to indirect, chunk of peach wood thrown on them & lid on to smoke
Threw a few ABTs on, just for the hell of it ~ japs from the Perrydize garden, stuffed with homemade pimento cheese

Sunday Breakfast On Da Bayou
The perfect breakfast, eh? Got all the important food groups ~ bread, frosting, bacon & beer!! We don't need no steenkin' eggs.
A couple of fresh maple longjohns from the neighborhood donut shop, topped with about a half pound of dat good Burger's Country Bacon (sugar cured/pepper/smoked)
I'm thinkin' mebbe some fried country ham/buttermilk biscuits for football snackin' today?? GO Chiefies ... (cough, cough)

Faux Que
Roasted KC Strip steak chunks ... seasoned, tossed with a lil' bbq sauce & fired in a blazin' hot oven to slap a Pittsburgh burn on'em. Sided up with some mashed Yukon Golds & turnips with boiled cabbage, bacon and cheddar folded in ~ colcannon. I ain't sure what that green stuff on the back of the plate is...

Fresh Ground Sirloin Burgers


OK, so I butchered a beef strip loin yesterday ~ cut a bunch of KC Strip steaks, a sirloin roast, some beef cutlets and some cubed beef for chili ... saved the end cuts & scraps which I ground this morning to make these great burgers. The burgers weigh about 6-7 ounces each, and I pattied them kinda flat so they would fit on sliced bread ~ got patty melts on tap for the MNF game tonight. You know when it's real.....

KC Strip Loin
Breaking down a whole beef strip loin today ~ choice grade ~ weighed about 20 pounds ~ aged in cryo in my fridge for about 2 weeks, then cut up into nice big KC Strip steaks, a sirloin strip roast, some thinner steaks for pounding out and making chicken fried steaks, and then will grind the ends & scraps to make a couple pounds of good ground sirloin for burgers.

Goodnight All
A funeral service is being held down at the Baptist church for a woman who has just passed away.
At the end of the service, the pallbearers are carrying the casket out when they accidentally bump into a wall jarring the casket.
They hear a faint moan.
They open the casket and find that the woman is actually alive.
She lives for 10 more long years and then dies.
A ceremony is again held at the same church and at the end of the service the pallbearers are again carrying out the casket.
As they are walking out of the church, the husband cries out: "Watch out for the wall!"
