Barbecue Beef
Shredded beef bbq ~ used choice grade chuck roll cut into *roasts*, studded with Burgers' bacon lardons & rubbed with Oakridge BBQ rub ... smoked hot & nasty (300-325*) using hickory wood, then crutched @ 165* and taken up to 200* ... shredded like buttah.
Here's some of it that I sliced & chopped when I pulled it out the smoker @ 165* to foil it ... it wasn't done, but close enough fer gubmint work ... I was hongry!
Blue Smoke Rising
Fire In The Hole!! Stoked up the smoker about an hour ago ~ just put the meat on: bigassed beef chuck roasts studded with Burgers bacon lardons & rubbed down with Oakridge BBQ rub. Blue hickory smoke risin', baybee!!

The Second Coming
Boudreaux suddenly quit drinking, started bathin' all regular like, quit chasing women, stopped cussin’ ... and quit his poker games.
He started cutting the grass around the church, even painted the church building, and was faithful to be first to attend services on Sundays!
Father Thibodeaux asked him what about dis wonderful change that had done overtook him.
Boudreaux say: I heard'em say on da teevee "Crisis in the Gulf" ... an’ I figured if He’s dat close, I wanna be good to go!

Scalloped Taters & Ham Casserole
Gettin' My Ham Freak On
OK OK ~ so I put a bigassed bone-in ham in the oven about an hour ago ~ just basted it ~ will bake & baste for 4 hours slow & easy, then glaze (maple) for a final 20-30 minutes. On the docket: scalloped potato & ham casserole, ham & beans with cornbread, deviled ham salad, sliced ham for sandwiches, ham & beans, etc. On a side note ... I woke up this morning with NO hangover and then I thought of all them poor bastids at Winfield who are feelin' like crap right about now. Whooooboy, I don't miss that part about Winfield ~ sobreity rocks! Now ... pass the ham, please.
