First ... You Make A Roux

 Gotta be lard....
 Roux after about 45 minutes
 Roux after about an hour & 15 minutes
 The Holy Trinity (plus a few carrots)
 Fritz's smoked andouille and some chicken chunks
A proper bowl of gumbo ... rice was added to the top after this pic was taken
