Mediterranean Chicken Soup

Sub-zero temps and 4' snow drifts call for soup. Hearty homemade soup. So I hauled off and threw a big ol' stewin' hen in the pot & commenced to making some soup ~ mice en place determined it to be a Mediterranean inspired soup ... similar to one I used to make when I was Sous Chef at a Mediterranean Bistro in Kansas City. Savory & garlicky ~ secret is the homemade broth, with about 20 whole cloves of garlic!

I was snooping around and came across your Tanner's Onion Ring post. When were you a Chef there and which location? My wife (girlfriend at the time) used to be a waitress there.

the soup looks greeat as does the dog below. I ordered a lifetime supply (3 pkgs) of the hog casings today - and plan to take my maided voyage next week.

I've been hemming and hawing today so didn't have a clue what to fix for dinner. I have leftover broth and leftover chicken, won't be near as good as this one but we'll be hungry and not notice maybe! Thanks for helping me decide what's for dinner!

Okay, I have to try broth with whole cloves of garlic. I usually put in some garlic after smashing it, but have never used whole. If you don't mind sharing, about how many cups of broth to 20 cloves?
