Hot Off The Smoker ~ Smoked Striper

Striper filets brined overnight, then cut into steaks ... brushed with EVOO & dusted with DP Raging River then smoked hot & nasty / indirect hardwood charcoals & a chunk of mesquite wood.

Hot Off The Smoker.

Flaked for to make some feesh soft tacos.
