Barbecue Beef

Shredded beef bbq ~ used choice grade chuck roll cut into *roasts*, studded with Burgers' bacon lardons & rubbed with Oakridge BBQ rub ... smoked hot & nasty (300-325*) using hickory wood, then crutched @ 165* and taken up to 200* ... shredded like buttah.

Here's some of it that I sliced & chopped when I pulled it out the smoker @ 165* to foil it ... it wasn't done, but close enough fer gubmint work ... I was hongry!

Mary, it's amazing what a lil' smoke & TLC will do for a cheap piece of meat. (g)

I think you said you got that on sale for $1.99 a pound, bet it tasted like a Peter Luger steak!
