Lol, we do it both ways. The first time we eat a batch, its with the beans on top of the fresh cooked rice. however, for them lazy leftover eatin days, i mix the rice and the beans together, and store in one container in the fridge.
yep, i do the same thing mooney. the *authentic* way i learned to make it when i was a chef working in louisiana is beans on top. my interest in authenticity stems from the fact that people who buy those box kits of red beans & rice (gawd ferbid) actually think that's the traditional way it's made - all mixed together. more's the pity, eh?
Same sort of thing for the first time/mix the l'overs. We mound the rice in the center of a wide shallow bowl and ladle the beans around it, like a moat. If we're feeling fancy, we'll mold the rice in a ramekin first.
yep on the rice mold ~ that's an old restaurant chef's trick ... you cook professionally david? i do the rice mold thing with my gumbo, only i use a soup cup instead of a ramekin.
