Happy Birthday, Dad

Walter Roscoe "Boscoe" Eddy ... August 31, 1923-April 12, 1999 ... Gone but not forgotten. Dad would have been 88 years old today. He was a wise and moral man. This pic was taken when Dad & Mom were on a Hawaiian cruise, unsure of year, probably mid-80s. I've seen this pic many times, but when I took it out the photo album yesterday to scan it ... I found this inscription on the back ... in Dad's handwriting: "This is me, waiting for the bikini parade. Somewhere on the high seas."

Loose Ends

This is a mixture of fried vegs that I like to add to my taco/burrito meat ... taters, onions and chiles ... pretty traditional to find taters in authentic mexican meat fillings. Sometimes I'll throw a handful of peas in the mix also ... din't have any this time.

These are some grillades that I cut from a beet tri-tip ... will use them to make some cajun grits & grillades

Downlow country supper ... bread & gravy (heel of a loaf of bread & leftover pork chop gravy) ... but the interesting thing is the sliced homegrown tomatoes with gravy on them. It's a country thang....

Hound Dog Taylor - The Sun Is Shining

Rigatoni/Cheeseburger Bake

Had some odds & ends floatin' around in my fridge, so I cleared them all out in one fell swoop - turned out pretty dang good: rigatoni pasta, crumbled leftover burger, bacon, onions, corn & roasted peppers, cheesy cheddar mornay sauce ... mix ... turned into casserole & topped with slices of homegrown tomato & a lil' asiago cheese ... bake till bubbly.
