


Fresh catfish, marinated overnight in PoBoy Mustard BBQ Sauce then dusted with Dizzy Pig Swamp Venom and smoked with pecan and apple wood ~ flaked & folded into cream cheese mixture with herbs, garlic, green onions, peppadews & I don't know what all. Sure taste good on a Ritz wit a cold beer chaser....

Hey Brotherman, I was just down in Alabama and had a plate of catfish fillets. Pond raised of course. My sister always volunteers to bring catfish casserole to the company dinners.LOL Edder
howdy edder ~ them southerners love their catfish. when i lived and worked in mississippi, i was amazed that every little roadside gas station & quick mart sold fried catfish ~ fried it fresh and had it under heat lamps by the cash register - impulse buy. lol need gum? candy bar?? fried catfish???
Don't know if it's a southern thing or not but a lot of the bbq places serve catfish. Un like bbq I got to have a good sauce with my catfish. Just now learning to make tartar sauce. I try to get as close to Captain'Ds as possible. Comfort food man. Edder
