Chicken/Hummus Wrap


 Roasted red pepper hummus schmeared on a warm wrap & topped with shredded chicken, lettuce, kalamata olives, pepperoncini peppers, a spritz of fresh lime juice and dressed with a lil' my homemade kaw-cajun comeback sauce ... then rolled up and ate over the kitchen sink!

Roasted Red Pepper Hummus/Flatbread Pizzetti

 Warm flatbread topped with homemade roasted red pepper hummus, then sliced and topped with cherry tomatoes, kalamata olives, pepperoncini peppers and shredded roasted chicken

Finished with a spritz of fresh lime juice and a drizzle of Annie's Roasted Red Pepper EVOO ~ who knew healthy could taste so good?

Roasted Chicken / Shredded

 Chicken stuffed with lemons and slathered with Annie's Roasted Red Pepper EVOO
 This is the white meat, shredded for soft tacos, wraps, salads, etc
 Chicken roasted @ 425* for about an hour - internal temp in the thigh 170*
Basted with the EVOO a couple times during the roasting - resulting in a beautiful crisp golden skin

Make easy beds for them that's sick

Let kindness bless the trail we ride
No matter what we're after
And sorta keep us on your side, in tears as well as laughter

I've seen old cows a-starvin', and it ain't no happy sight
Don't leave no one hungry, Lord, on Thy good Christmas night
No man, no child, no woman, and no critter on four feet
I'll aim to do my best to help you find 'em chuck to eat
I'm just a sinful cowpoke, Lord, ain't got no business prayin'
But still I hope you'll catch a word or two of what I'm sayin'
We speak of Merry Christmas ~ Lord, I reckon you'll agree
There ain't no Merry Christmas for nobody that ain't free

So one more thing I'll ask you, Lord, just help us what you can
To save some seeds of freedom for the future sons of man. Amen.
