this is brown sugar cured, sliced hog jowl ... aka face bacon. i get it at a small locally owned grocery store a few blocks from my house. it comes from a company called burgers smokehouse, which is over in the missouri ozarks. they have many good products, all of which can be ordered directly from their web site.
