Firing up the trusty ol' WSM this morning for a lil' smoke session ~ wouldn't be 4th of July without some bbq. Got a bunch of choice grade boneless beef short ribs prepped, and also a couple slabs of St. Louie trimmed pork spareribs & a coil of homemade Texas Hill Country hot sausage ~ smoking with mix of pecan and apple wood chunks.
