Pork & Green Chile Sauce

Roasted Hatch chiles, serranos & onions

Peeled, seeded & chopped

Lil' fresh cilantro

Cilantro added to sauce at last minute

Base of sauce is brown chicken stock & roasted tomatoes (in addition to all the roasted chiles & pork) tightened up with a bacon fat roux

We be making "Sloppers" this weekend, ah garrontee
