Fresh Ground Sirloin Burgers

OK, so I butchered a beef strip loin yesterday ~ cut a bunch of KC Strip steaks, a sirloin roast, some beef cutlets and some cubed beef for chili ... saved the end cuts & scraps which I ground this morning to make these great burgers. The burgers weigh about 6-7 ounces each, and I pattied them kinda flat so they would fit on sliced bread ~ got patty melts on tap for the MNF game tonight. You know when it's real.....

KC Strip Loin

Breaking down a whole beef strip loin today ~ choice grade ~ weighed about 20 pounds ~ aged in cryo in my fridge for about 2 weeks, then cut up into nice big KC Strip steaks, a sirloin strip roast, some thinner steaks for pounding out and making chicken fried steaks, and then will grind the ends & scraps to make a couple pounds of good ground sirloin for burgers.

A funeral service is being held down at the Baptist church for a woman who has just passed away.

At the end of the service, the pallbearers are carrying the casket out when they accidentally bump into a wall jarring the casket.

They hear a faint moan.

They open the casket and find that the woman is actually alive.

She lives for 10 more long years and then dies.

A ceremony is again held at the same church and at the end of the service the pallbearers are again carrying out the casket.

As they are walking out of the church, the husband cries out: "Watch out for the wall!"

Chicken thighs were on sale, so I bought a couple buck's worth & fried'em up southern style in the ol' Griswold cast iron skillet. Do you think I made some gravy wit them pan drippins, huhhhhhh????

Autumn Sunrise

Rabbit Redux

Years ago while lying in my hammock and drinkin' JD from the bottle I noticed my dog draggin' something under the fence. Upon inspection, to my dismay, I realized it was the next door neighbor's 10 year old daughter's pet rabbit.

For years I had watched her come home from school and head straight out to it's cage, free it and play with it in the yard. I knew today would be no different and fearing for our dog, I had to think fast. The rabbit was quite dirty, as if it had put up quite a struggle, so I washed it off with the hose, combed it with the dog brush and blew it dry with the leaf blower. Upon finishing it's grooming I hopped the fence and placed it back in it's cage hoping it's death would be written off as "natural causes".

Back to the hammock and my JD. Within the hour the neighbor's Volvo pulled in as usual and out popped the little girl, and as usual she headed straight for the cage. Only this time she stopped about six feet away and screamed: "DDAAADDDDDYYYYY!!!!!!!!!!!!!"

Her father, panic stricken, stood looking at the cage. Being the good neighbor that I am I rushed to fence and asked if there was anything I could do. Her father less than calmly blurted, "What kind of sick individual would dig up a little girl's dead rabbit and put it back in it's cage??"

Roast Pork Loin A'la Anglaise

About a 3 lb. pork loin roast, seasoned and seared ... then slathered with anglaise sauce (equal parts mustard and brown sugar) ... then roasted tender in a lil' unfiltered apple cider.

After roasting for about an hour, I added some baravian kraut & apples/onions around the roast and continued to roast for another 45 minutes. Served it up with homemade spaetzel.

Not Yer Mama's Pork Chop

Not unless yer mama's name was Gretchen ... or Hilda ~ in any case, these are some grilled pork loin chops braised tender a'la anglaise with bavarian kraut & apples, and sided up with some homemade spaetzel sauteed in butter ... chops napped with a sauce made from the pan juices & fresh unpasteurized apple cider.

Couple of grilled bbq pork loin chops, sliced & sauced with a corn/sweet pepper/wild sand plum compote ~ served it up over some fluffy white rice.

BBQ babyback ribs (rubbed with Slabs rib rub, smoked with peach wood & sauced with Smokey Mountain Smokers bbq sauce), homemade mustard potato salad and pickled green tomatoes.

Pork & green chile rainbow stew made with pork loin, onions, garlic, carrots, potatoes, white beans, herbage, homemade ham stock, homemade roasted green chile sauce, beer, roasted tomatoes, cumin, cracked black, etc.

LOL Note the scowl on the face of the little boy in the front row ... his name is Richard Lowery, and I don't think he's too happy about being in the only boy in the front row with all them cute lil' girls!

Afternoon Snack

OK ... so I blackened a cobia filet for supper last night, and today I grilled the other cobia filet to make some feesh tacos for supper tonight ... decided I needed a snack, so I flaked off a lil' dat grilled cobia & made these lil' buggers ~ topped wit homemade corn/black bean salsa, etc. Chased'em down wit a cold beer ~ thinkin' mebbe I'll make it to suppertime now....

Blackened Cobia

Blackened cobia sided up with stewed bread'n'tomatoes, cheesy grits, cornbread, green tomato pickles & some kicked up tartar sauce made with homemade corn chow chow.

Brined cobia filet ... brushed with bacon fat, seasoned generously with homemade blacken seasoning & into screamin' hot black iron skillet for 2-3 minutes on each side then finished in oven.

Brined filets before seasoning ~ cobia is some beautiful fish, firm and tasty ... saltwater fish ... this was caught by a buddy of mine (Hawgeye Mike) off the coast of Florida.

Pig Farmin'

A farmer had five female pigs. Times were hard, so he decided to take them to the county fair and sell them. At the fair, he met another farmer who owned five male pigs. After talking a bit, they decided to mate the pigs and split everything 50/50. The farmers lived sixty miles apart. So they agreed to drive thirty miles each, and find a field in which to let the pigs mate.

The first morning, the farmer with the female pigs got up at 5 AM, loaded the pigs into the family station wagon, which was the only vehicle he had, and drove the thirty miles...

While the pigs were mating he asked the other farmer, "How will I know if they are pregnant?" The other farmer replied, "If they're lying in the grass in the morning they're pregnant. If they're in the mud, they're not." The next morning the pigs were rolling in the mud. So he hosed them off, loaded them into the family station wagon again and proceeded to try again. This continued each morning for more than a week.

The next morning he was too tired to get out of bed. He called to his wife, "Honey, please look outside and tell me whether the pigs are in the mud or in the grass."

"Neither" yelled his wife, "they're in the station wagon and one of them is honking the horn."

Stewed Bread & Tomatoes

Well, here's an old retro veggie dish that you just don't see anymore ... the old folks used to just call it breaded tomatoes OR bread'n'tomatoes. It used to be popular back in the 50s and 60s, especially in the lil' mom & pop cafes and diners as part of their meat & three blue plate specials. I hated it as a kid, but I absolutely love it now ~ the secret to good bread'n'tomatoes is adding a lil' sugar to sweeten it up a bit ... and use canned homegrown tomatoes, of course. I start my pot with a lil' bacon grease, sweat some onions and green peppers, then add the tomatoes & simmer/stew for about 30 minutes until thickened a bit ... season with salt, lotsa cracked black and some sugar ... then remove from heat & fold in the day old bread chunks so the bread soaks up all dat delicious juice. An oldie, but a goodie.

Italian roll schmeared with homemade garlic/herb compound butter, then sprinkled with parmesan cheese & toasted.

Homemade meatballs (sliced thick) and slow simmered bolognese sauce topped with melted fresh mozzarella cheese.

Sprinkled with red pepper flakes & topped with homemade pickled/mixed peppers ~ lid on, and eaten standing over the kitchen sink.

Justice In Kansas City

Justice in Kansas City: (AP) - A twelve year old boy was at the center of an Johnson County courtroom drama yesterday when he challenged a court ruling over who should have custody of him. The boy has a history of being beaten by his parents and the judge initially awarded custody to his aunt, in keeping with child custody law and regulation requiring that family unity be maintained to the highest degree possible.

The boy surprised the court when he proclaimed that his aunt beat him more than his parents and he adamantly refused to live with her. When the judge suggested that he live with his grandparents, the boy cried and said that they also beat him. After considering the remainder of the immediate family and learning that domestic violence was apparently a way of life among them, the judge took the unprecedented step of allowing the boy to propose who should have custody of him.

After two recesses to check legal references and confer with the child welfare officials, the judge granted temporary custody to the Kansas City Chiefs Football Team, whom the boy firmly believes are not capable of beating anyone.

Hearty German Fare

Well, I bought a whole boneless pork loin on sale ~ cut it up into different cuts (some thick chops for the bbq grill, some big chunks for braising with green chile sauce, some thin chops for pounding out and making fried pork tender sands & pork picatta, a nice big pork roast for roasting with sauerkraut, etc) and ended up with a couple of nice thick chops leftover ... hadda couple apples in the fridge & a half an onion ... made a lil' homemade spaetzel to side it up and sop the juices ~ voila, supper!

Homemade spaetzel (lil' german egg dumplins) ~ easy peasy to make. I make the batter, then press it thru the holes in my colander into a pot of boiling water ... shock ... drain ... then when ready to serve, saute' in butter wit a lil' garlic. I love these lil' buggers.

Mais, I just had to have my Sunday morning eggs ... so I ran down to the neighborhood groceria & got a dozen eggs and made this quick fritatta to go wit mah sausage biscuits ... a ham, fried potato/onion & pepperjack cheese fritatta. I'm ready for some football now!!

What I find interesting is this: Our parents knew well in advance that day was gonna be the fancy picture-takin' day ... and THIS is how they dressed us!! LOL
