Sunday Breakfast On Da Bayou

Fluffy green chile queso omelette, fried caramelized onion grits, crisp bacon ~ washed down wit a virgin bloody.

Caramelized onion/cheddar grits, chilled overnight ~ sliced & dredged in flour/yellow cornmeal & fried in bacon drippins.

Oh Yeah ~ dat's what I'm tawkin' about.

We don't need no steenkin' Egg McGriddle, no!

I have no idea why these talented people let me hang around with them, because I cain't carry a tune in a bucket ~ but in any case, this is the weekend of the great Walnut Valley Festival (know simply as Winfield to us) and it got me to thinking about some of the good times I've had with these folks above. Crunky Breakfast Biscuits

Mais, I got lost at the groceria this morning ~ hadn't had mah cawfee yet & was looking fer something quick for breakfast ... found mahself in the canned meat isle & spied a can of bacon SPAM ... dat's right, bacon-studded SPAM. Now, how's a bubba like me gonna pass that up, huhhh?? Came home and fried it up and slapped it on a scratch buttermilk cathead wit a splash of Tabasco and a drizzle of homemade blackberry jam. It was so gawdawful I ate 3 of them. Now ... it's time to crack a beer and settle in for an afternoon of NFL action.

The Ol' Pittsburgh Burn

Puttin' a lil' burn on some fresh cut pork steaks, for to make some shredded pork in green chile. Will use the shredded pork for Indian tacos, burritos & pork enchiladas smothered in homemade roasted green chile sauce. I cut these nice thick pork steaks out of the center of a couple pork butts when I was making homemade sausage the other day. Next project: Indian fry bread.

It's Football Season

Circa 1968-69 ~ I was a 4 year letterman ~ 3 year all-league ~ all-state honorable mention my Junior year and all-state 2nd team my Senior year ~ recruited by over 60 colleges and universities.

The Fighting Onaga Buffalos ~ I played both ways all 4 years, right offensive tackle and left defensive tackle. We only lost 1 game in the 4 years that I played ... and that was a 51-0 loss to Centralia, who had a player you may have heard of ~ John Riggins.

Tales From The Coonass Charcuterie

Mais, I got up this morning & got busy lickety-split makin' sausage ~ broke down & prepped all the pork butt and brisket yesterday & got my spice blends ready ... so this morning I was all ready to start grindin' & stuffin'. I just finished making about 6-7# of breakfast sausage and portioned it into 6 rolls, wrapped and into the freezer. Got the 60/40 pork butt, brisket point blend mixed with the spices & a bunch of fresh sliced/brined serranos ~ gettin ready to go stuff it into coils & links right now. Looks like I got about 13-15# of that, so that oughtta give me about 7-8 nice big 2# coils of hot sausage fer smokin' ... and when I was bustin' down those butts & briskets I cut 6 nice thick center-cut pork steaks ... will run them thru the smoker to git a lil' burn on'em, then braise them tender in some homemade roasted green chile sauce & shred'em fer makin' enchiladas, tacos, etc. Lastly, and certainly not leastly, I ended up with a nice brisket flat fer smokin' & making sliced bbq brisket. Total cash outlay for all this meat about $35 ... retail on all the finished product prolly over $150 ~ dat grinder & stuffer has paid fer itself several times over, yeh.

Got some brisket and pork butt on sale this week, and a sack full of serrano peppers from the Perrydize garden ~ so what's a po' plowboy gonna do, but make some hot links ... brisket/serrano hot links & coils. It ain't gonna be no damn sissy sausage, ah garrontee!

This is my grinder and stuffer that I bought from Northern Tool ~ good heavy-duty equipment, and the price was right ... got'em both fer under $200, delivered.
